Steak, Roasted Veggies and Cheddar Biscuits
Last night's dinner consisted of steak, roasted veggies (broccoli, french beans and zucchini), and cheddar biscuits. Mmmm.. Mmmm.. Mmmmmm!
I don't think the photo does it justice, but the steak was so flavorful and tender. Just how I like my steak. :)
My go-to roasted veggies broccoli, french beans and zucchini.
Last but certainly not least, cheddar biscuits. This is my second time making them and it's still delicious.

I finally did it!
I finally perfected my dad's fried chicken. It's a simple recipe but for some reason I can never cook it right. Simple yet frustrating. Go figure. But tonight I did it! And I'm so happy about it.
There's only a few pieces of fried chicken in this photo because Hubby and I were so hungry that we just dove right in eating. I only remembered to take a photo when I went back for seconds. Whoops!
I also made cucumber salad to go with the fried chicken. The cucumber salad is just like Thai papaya salad but with cucumbers instead of papaya. I actually like it better than papaya.

Korean Beef Rib Tacos
Tonight I made Korean Beef Rib Tacos for dinner. It was my first time making this recipe which I got here. And my Hubby quite enjoyed them. Usually, his response to anything I make new is "it's alright," until I've made it a few more times.
The slaw (carrots, onions and cilantro) that I made with the tacos was also good. This dish is a winner from both Hubby and I. I think I'll make this more often now. One thing I will change next time though is the size of the tortilla. The one in the photo is a bit too big for tacos.

fish, potatoes and veggies
The other night I made baked tilapia with roasted potatoes and veggies. This is my "healthy" go to dinner that I make at least once a week because I usually feel good after I eat this. I don't feel over full and bloated which is good.
I marinated the tilapia filets with olive oil, cajun seasoning (I usually use seasoned salt) but Hubby wanted a little more spice), black pepper, garlic powder and paprika.
I used broccoli florets and french beans for my roasted veggies. I rubbed olive oil, black pepper, red pepper flakes and sprinkled parmesan cheese on top for additional flavor.
With the potatoes, I again used olive oil, seasoned salt, black pepper and paprika.
Popped it in the oven at 390 degrees for 20 minutes and bada-bing bada-boom it's ready to eat.

Cakes! Cookies! Pies! oh my!
I am such a dessert person. A dessertie? A sweetie? More like a diabetic. (lol)
Anywho, I'm constantly searching online for recipes for cakes, cookies and pies. I've saved a handful of recipes and I've been meaning to try them. However, and it's a big however, my husband is not very fond of dessert with the exception of ice cream. And if I make cakes, cookies and pies (oh my!), I'll be the only one eating it and that's a big no no. The last time I baked cookies, I gave half of the batch for Hubby to bring to work so he could share with his soldiers, which he did. However, when he came home he mentioned that his soldiers were delighted for the cookies BUT they were all worried about gaining weight. Bah! So now even if I make any dessert, Hubby won't be bringing it to work to share with his soldiers and now I have no one to share my love of dessert with. We have no family around and I'm a hermit crab. I have no friends here. Wah. wah. Lonely am I. I need my friends and family to come visit us here so that I can make my desserts and share with them.

beef stir fry
I made beef stir fry tonight with my favorite veggies: broccoli, carrots, zucchini, green peppers and mushrooms. I've made this countless times already and each time it tastes better and better.
This is my go to recipe when I'm too lazy to slave away and make a much more fancy dinner. Prep time is usually 10-15 minutes and cook time is about 10 minutes. A fast and delicious dinner.

It's been almost 4 years since I last blogged. Oopsie! I did not stop cooking back in 2011. In fact, I actually cooked a lot since then. I just haven't blogged about it because I forgot about this blog. But hopefully that will change this year. So please come back time to time to see if I actually followed through. Heh.
